Winter is coming and what better way to battle through those cold nights than with some comfort food? Noodles are easy to cook, filling and flavoursome. Here are some simple dishes you can make at home with Mama Noodles, Thailand’s favourite instant noodles.
Stir-Fried Mama Noodles
This one is basic, simple and quick to make. Cook your Mama Noodles of choice in water for a couple of minutes and then stir-fry with vegetables and prawns, tofu or chicken (whatever you fancy). Season to your personal preference (you can use the seasoning that comes with the noodles packet or experiment with your own version) and stir in an egg at the end for a bit of extra oomph.
This one’s great for last minute dinner guests or for a mid-week pick-me-up. It’s also a great way to use up any left-over vegetables you have in the house. See the full recipe and instructions here.
Mama Ramen Shrimp Soup With Mini Pork Meatballs
This delicious meal only takes 20 minutes to prepare and the recipe serves 4. Perfect for a cold winter’s night or for when you’re feeling a little under the weather.
You’ll need four packages of Mama Shrimp-Flavoured Ramen Noodle Soup along with some ground pork (for the meatballs) and twelve large prawns. For instructions and a full list of ingredients, head to the Tasting Table website.
Yum Mama
Yum Mama is what Thai people tend to call an Instant Noodle Salad.
Try this warm Mama Noodles salad for dinner one night. Just like an egg salad, this light yet hearty, it can be made with a combination of prawn, pork or chicken to suit your particular taste. The flavoursome dressing is made from chilli, coriander, fish sauce, soy sauce, lime juice, palm sugar and lemongrass… enough to make your mouth water just thinking about it!
You can vary the recipe depending on what noodle packet you’d like to use. Mama Noodles come in a variety of flavours, each including a different paste or pre-made seasoning pack.
This recipe from Hot Thai Kitchen makes four servings so you can keep any leftovers for lunch at work the next day. You can re-heat it in the microwave or enjoy as a cold salad.
