Stir-Fry Prawns

Ingredients :

Fresh Prawns 450g (12 tael), Minced Ginger 2tsp, Minced Garlic 2tsp, 2 Spring Onions (cut into small strips)

Seasoning :

Amoy Light Soy Sauce 1 1/2tbsp, Shaoxing Wine 2tsp, Sugar 3/4tsp

Method :

  1. Trim off whiskers, legs and sharp parts on the head from the prawns. Remove the veins from their back. Rinse and drain well
  2. Heat the pan with oil, stir-fry the prawns with high heat until they turn red. Drain and set aside
  3. Sauté minced ginger, minced garlic and spring onions. Toss in prawns and seasonings then stir-fry until the sauce is thickened
