| Ingredients
- 2 eggs, separated
- 1 cup (250 (250mL) VITASOY Soya Bean Drink
- 2 tsp baking powder
- 1 cup (150g) plain flour, sifted
- 50g unsalted butter, melted and cooled
- 2 bananas, sliced
- Pulp of 4 passionfruit
- 1 cup (280g) reduced fat yoghurt

| Instructions
Step 1
Heat a waffle iron according to instructions.
Step 2
Place egg whites in a bowl and beat using electric beaters until stiff.
Step 3
In another bowl, combine egg yolks, soya drink, baking powder, flour and melted butter. Beat until smooth, then fold in egg whites. Cook batter in the waffle iron.
Step 4
Serve hot waffles topped with sliced banana, passionfruit and yoghurt
Note: Alternatively, you can heat it as a pancake in the pan.
