Fruity Couscous


Ingredients
1 cup (250mL) Vitasoy Soya Bean Drink
3 strips orange rind
1 cup (200g) couscous
½ cup dried figs, roughly chopped
½ dates, pitted, roughly chopped
1 cup dried apricots, roughly chopped
½ cup macadamia nuts, toasted, roughly chopped
¼ cup almonds, toasted, roughly chopped
2 green apples, cored, cut into 2 cm cubes
Juice and finely grated zest of 1 lime

Instructions
Step 1 Preheat oven to 180ºC. Heat VITASOY Soya bean Drink and Orange rind in a pan – do not allow to boil.
Step 2 Place the couscous in a bowl, pour over the hot soya drink and stir until absorbed. Discard orange rind. Fluff couscous with a fork to remove lumps.
Step 3 Add dried fruit and nuts and mix thoroughly, then transfer to a shallow ovenproof dish. Cover with foil and place in the oven for 20 minutes. Add apple, lime juice, zest and fluff with a fork. Serve with yoghurt if desired.
