Chicken & Bok Choy Stir-Fry

Serves: 4
Preparation Time: 10 mins
Cooking Time: 12 mins

Ingredients
  • 4 1/2 cups (cooked) SunRice Thai Jasmine Fragrant Rice
  • 2 tblspns oil
  • 500g chicken breast or thigh fillets, diced
  • 2 onions, cut into thin petals
  • 2 cloves garlic, chopped
  • 4 baby bok choy, washed and chopped
  • 3 tblspns water or mirin (cooking wine)
  • 4 tblspns oyster sauce

    Instructions
    1. Heat oil in a wok or frypan over high heat. Cook chicken fillets and onion until chicken is browned and cooked through, 8-10 minutes.
    2. Add cooked rice and remaining ingredients and stir-fry for 3-4 minutes or until bok choy is just cooked. Serve.
    Tips: Cook 1 1/2 cups rice to make 4 1/2 cups cooked rice required for this recipe.
